Ingredients needed for a pound of fish:
- 2 tablespoons melted butter
- 1/4 teaspoon dried marjoram
- 1 tablespoon finely chopped onion
- 3 tablespoons lemon juice
- I teaspoon lemon zest (grated lemon rind)
Wash the fillets in a bowl of water (rather than under running water.) Marinate in the above marinade for 15‑20 minutes.
To bake, arrange the fillets in a cake pan so that the thickness is even. They can be pushed together or put in two layers, just try to have the total thickness even. Pour the marinade over the fish in the pan.
Bake on the top rack with the oven set on preheat, temperature 400 degrees. This means you are baking & broiling at the same time. Watch carefully, it is done when it flakes when poked with a fork. The trick to cooking fish well is to get it done, but not overcooked. Broiling takes about 10 minutes per inch of thickness for fresh fish so this is not going to take long to cook.
