This is a recipe that was given to me years ago by the mother of one of my daughter's preschool friends. I like the custom of sharing food, sharing recipes and sharing memories.
Ingredients needed:
1/2 cup butter
1/2 cup cream cheese
1 1/2 cups sugar
6 tablespoons cocoa
1 egg, beaten
2 tablespoons milk
1 teaspoon vanilla
2 1/4 cups flour
1 1/2 teaspoons baking powder
1/8 teaspoon salt
How to make them:
1) Lightly grease two cookie sheets
2) In a small microwave-safe bowl, soften the butter and the cream cheese.
3) Transfer them to a large bowl, cream them together, then add the sugar and cocoa and cream them all together until they are smooth.
4)Combine the egg, milk and vanilla and add them to the big bowl. Mix thoroughly.
5) Measure the flour, baking powder and salt into a flour sifter. Sift them into the big bowl and mix thoroughly.
6) Using two soup spoons, drop spoonfuls of the dough on to a greased cookie sheet. It is okay to put them close together as they retain their shape and do not spread out while baking.
7) While the first cookie sheet is baking, prepare the rest for baking. Do not put two cookie sheets in the oven at the same time. They will not bake evenly.
9) Bake 10-12 minutes. I do not know any way to test them for done-ness. Do not bake them longer than 12 minutes even if they look a little soft. When they have cooled slightly, remove them from the cookie sheet with a spatula.
10) After they are thoroughly cool, store them in an air-tight container. They should be eaten within a few days or frozen.
11) Enjoy!
Happy Cooking!
