Ingredients for Crusts:
- ½ cup butter (125 g.)
- 1 cup brown sugar (215 g.)
- 1 cup sifted flour (120 g.)
- ½ teaspoon salt
- 1 ½ cup rolled oats (125 g.)
Ingredients for Filling:
- 1 cup pitted dates (200 g.)
- 1 cup water
- 1 tablespoon lemon juice
Pre-heat the oven to 350 degrees Fahrenheit and grease an 8-inch square baking pan.
First, prepare the filling. Cover dates with water and cook slowly until soft. Add the lemon juice and let the mixture cool.
While the filling cooks and cools, prepare the crust mixture.
Cream the butter and sugar, add the flour, salt and rolled oats. Mix thoroughly.
Spread half the crust mixture in the baking pan. It should cover the bottom evenly. Pat it down gently.
Spread the date filling over the crust, then add the remaining crust mixture.
How do you tell when this is done? As usual with baking, this is a difficult question. It will taste good whether it is just right, overdone, or underdone. I think a difference will be in how crumbly it is.
Cool and cut into small squares to serve.
