- 1/2 cup butter softened at room temperature
- 1 &1/2 cups sugar
- 3 cups sifted flour
- 3 teaspoons baking powder
- 4 teaspoons cinnamon (or more if you really like cinnamon)
- 2 eggs
- 3/4 cup milk
The CakePreheat oven to 375 degrees (F). Bake about 25 minutes. Grease and flour a 9" x 13" pan In a large bowl, cream together: 1/2 cup butter 1 & 1/2 cups sugar Measure into flour sifter: 3 cups sifted flour 3 teaspoons baking powder Sift the dry ingredients into the creamed butter and sugar. Mix. Take out 3/4 cup for the topping. After you have made the topping, return to the large bowl and add: 2 eggs 3/4 cup milk Beat these together until they are smooth. Pour this mixture into the oiled pan. Sprinkle the crumbs on top. Bake for about 25 minutes. Begin checking for done-ness at about 20 minutes. | The ToppingIn a small bowl, using the 3/4 cup of the Cake mixture, make cinnamon crumbs by adding: 4 teaspoons cinnamon (or more if you really like it) Stir together with a fork. Continue mixing the cake batter. After the cake batter is in the pan, add the crumbs on top. |
How to tell if a cake is done
1. Gently touch the center of the cake. If it springs back and your finger does not leave a dent, it is probably done.
2. Look at the edges. If the cake has pulled away from the sides of the pan, it is probably done.
3. Use a cake tester, a thin metal rod. ( I actually use a skewer for holding roast poultry together. ) A toothpick will probably work, too. Stick the tester into the center of the cake. If it comes out clean, the cake is done. If it is sticky, bake the cake another 5 minutes and then test again
Caution, baking the cake too long will dry it out.
